Despite
his young age, Chef J.D. Silvey is a seventeen-year veteran
of the hospitality business. Silvey worked in his family's
restaurant and catering business as a teen-ager, planting
the seeds of his future career, at Central Catering as Vice-President
and Head Chef.
Silvey attended
culinary school at Sullivan University, where he graduated
with honors in a program based on traditional French cuisine,
garde mange, modern cuisine, international cuisine, and baking
and pastry.
Silvey's career
has been marked by several distinguished opportunities around
the world. One of these was being selected as one of twenty
young chefs by Bon Appetit Magazine to help crew the American
Pavilion at the Cannes Film Festival in France. At Cannes,
Silvey collaborated with such chefs at Tyler Florence, Mario
Batali, and Todd English.
This past year,
Silvey was selected by the Lexington Rotary Club and Rotary
International for a group study exchange in Italy. In Venice,
Silvey studied under four chefs at the upscale Hotel Cipriani
which caters to such clientele as former President Bill Clinton
and many other world dignitaries.
Silvey is a lifelong
resident of Lexington and is deeply committed to his clients
and their happiness. As Silvey has stated, his reputation
is based on the quality of his work, and he would have nothing
less than perfection!
